Each year our students are trained by Dr. Charles White to detect specific defects that can occur in dairy products at various stages of production or after the product has been made available to the public. These students spend hours preparing for competition each year and sampling cheese, milk, butter, yogurt, and other dairy products to understand the defects. The skills that are learned during this course and the competitions are skills that are vital to producing a good product. The team competes in the Collegiate Dairy Products Evaluation Contest that is held each year at the Cheese Expo.
