I just received a promotion from an Assistant Scientist to an Associate Scientist in Corporate Research & Development with the Coca-Cola Company in Atlanta, GA. My Beta fish, Trey, has recently died. I had a nice ceremony for him, before I flushed him into the Chattahoochee River.

My former employer US Smokeless Tobacco (the makers of Skoal, Copenhagen, and Chateau St. Michelle wine) in Nashville, TN was recently purchased by Philip Morris USA. In August our R&D department was relocated to their Richmond, VA headquarters. I am currently an Associate Research Scientist, Microbiologist in their Center for Research and Technology. I retained my Titans Season Tickets anyway! Go VOLS & Titans. Fan for life!

In December of 2007 I left Cadbury schweppes as an Associate Scientist working on Bubblicious and Dentyne ICE. Presently work for Godiva Chocolatier as a Research Technologist in Reading, PA. Typically I am working in a commercialization capacity, but from time to time I get to be a Chef for Godiva.

I graduated from the University of Maine with my Ph.D. in May 2007. In October, I accepted a position at Beam Global Spirits and Wine, the parent company of Jim Beam, as a new product developer.

After earning the M.S. in Food Science & Technolog at UT I went to pursue my PhD at UMASS. Now I am working at Sensient Flavors as Innovation Scientist (Emulsions, Microemulsions, and other delivery systems).

I am married with one daughter. My husband's name is Brian, and my daughter's name is Allyson, who is 2.5 years old. We also have a cat named Chase. I work as a Food Technologist in the Flavors-Beverage Unit, going on 4 years at Firmenich.

So we're in Italy now, and we've started a blog for everyone to keep up with us! There's so much great stuff here, it's almost impossible to cover it all. For the food science students, you HAVE to take a trip to Italy at some point! It's amazing, and a definite learning experience. For anyone else, it is an awesome place, and well worth your time. Check out our blog, as I'll be keeping that up to date better than here.

After earning my B.S. in FS&T in 1979, I completed my master’s degree in environmental health from ETSU; I worked for the Virginia OSHA program as an industrial hygiene consultant and worked 13 years as the Associate Director of Environmental Health and Safety at the Medical College of Virginia/Virginia Commonwealth University. I received my doctor of philosophy in public and environmental health from Virginia Commonwealth University in 1998. In 2000, I began my college teaching career at East Carolina University where I served as Asst Professor of Environmental Health for two years. In 2002 I joined the faculty at Western Carolina University in Cullowhee, NC. I am currently the Program Director of Environmental Health Sciences – School of Health Sciences. I currently serve on the NC State Board of Sanitarian Examiners. I have served as faculty fellow for Oak Ridge National Laboratory for the past three years (Metals and Ceramics Division and the Center for Nanophase Materials Sciences). I am married to Tracy L. Zontek. Tracy is also a professor of Environmental Health at WCU. We reside in Cullowhee, NC.

Kristina K. Carter (Ph.D. 2007) completed Officers Development School with the United States Navy in April, 2008. Kristina holds the rank of Lieutenant and serves as Division Officer of the Microbiology and Pathology Lab at the National Naval Medical Center in Bethesda, MD.
